PORTUGESE CHICKEN PIZZA
Pizza is an anytime meal at meal. Super easy, doesn’t take lots of time and tastes much better than store bought.
- 1 tablespoon yeast
- 1⅛ cups of lukewarm water
- ⅛ cup of sugar
- 1 tablespoon of oil
- ½ teaspoon of salt
- 3 cups of cake flour
Mix the yeast and water in a large mixing bowl, add a pinch of sugar and let it rest for 5 minutes.
Thereafter add the oil, sugar and 2 cups of the flour.
Knead into a soft dough, add the rest of the flour a little at the time until dough is nice and rollable. (You may not need all the flour)
Leave to rise in an oiled bowl for 40 minutes in a warm place.
Meanwhile make a topping. I made a Portuguese chicken topping.
- Cooking together:
- 2 pieces of chopped chicken fillets
- ½ teaspoon of garlic
- 1 tablespoon of olive oil
- ½ a slices onion
- 1 chopped tomato
- 1 sliced green pepper
- 1 teaspoon of Portuguese spice
- salt and pepper
- Add to the cooked mixture:
- 1 tablespoon chilli sauce
- 1 tablespoon tomato sauce
- Extra:
- grated Mozzarella
- pizza sauce (store bought)
Once topping is cooked, add the chilli sauce and tomato sauce to the mixture.
Roll the dough out on a floured surface into a pizza, place on a prepared baking tin and add the topping.
Sprinkle grated Mozzarella on top of the topping and add pizza sauce to taste.
Bake the pizza at 180°C for 10 to 12 minutes.
Note:
My topping is optional. Make as you please.
