MACKEREL TART

Lockdown day #82🇿🇦. The humble tin of fish provides a delicious light lunch.

  • 1 frozen previously made short crust pastry in foil tart plate (link below)

  • 1 tin Mackerel in tomato sauce, (bones removed) flaked and keep at least half of the sauce separately
  • 1 onion, chopped
  • 1 green pepper, sliced
  • 2 eggs
  • 200 ml cream
  • 150 ml Parmesan cheese, grated

Preheat oven to 180°C (I baked in my LG Solardom convection oven at same temp).

Fry the onion and green pepper in a bit of oil till soft.
Put the flaked Mackerel pieces on the bottom of the cold tart pastry.
Sprinkle the onion and green pepper over.
Beat the left over tomato sauce from the tin with the eggs and cream with a fork.
Pour over the fish, onions and green pepper.
Sprinkle the grated Parmesan over and bake until set.
It should take about 30 – 45 minutes depending on oven.
