LEMON AND POPPY SEED MUFFINS

I tried a new recipe for lemon and poppy seed muffins and they are so delicious.
- Zest of two lemons
- ¾ cup of brown sugar
- 1 large egg
- 1 cup of plain yoghurt/ sourcream/ milk
- ½ cup of sunflower oil
- 2 tablespoons of lemon juice
- 2 tablespoons poppy seeds
- 2 cups of cake flour
- 2 teaspoons of baking powder
- 1 teaspoon bicarbonate of soda
- ½ teaspoon salt
- Mix together the lemons zest and brown sugar with a spoon.
- Add the eggs, yoghurt, sunflower oil, lemon juice, milk and poppy seeds to the lemon zest mixture.
- Finally add all the sifted dry Ingredients and combine .
- Grease a muffin pan and scoop mixture into your pan.
- Bake in a preheated oven at 180ºC for 20 minutes.
