LEMON AND POPPY SEED MUFFINS

I tried a new recipe for lemon and poppy seed muffins and they are so delicious.

  • Zest of two lemons
  • ¾ cup of brown sugar
  • 1 large egg
  • 1 cup of plain yoghurt/ sourcream/ milk
  • ½ cup of sunflower oil
  • 2 tablespoons of lemon juice
  • 2 tablespoons poppy seeds
  • 2 cups of cake flour
  • 2 teaspoons of baking powder
  • 1 teaspoon bicarbonate of soda
  • ½ teaspoon salt
  • Mix together the lemons zest and brown sugar with a spoon.
  • Add the eggs, yoghurt, sunflower oil, lemon juice, milk and poppy seeds to the lemon zest mixture.
  • Finally add all the sifted dry Ingredients and combine .
  • Grease a muffin pan and scoop mixture into your pan.
  • Bake in a preheated oven at 180ºC for 20 minutes.
