CAULIFLOWER SALAD

CAULIFLOWER SALAD

I love potato salad, but if you would like to try a low carb version, do it with cauliflower instead. It is a really good substitute.

  • 1 head of cauliflower in bite size pieces, steamed until cooked but still crispy
  • 4 boiled eggs, peeled and chopped into small bite size pieces
  • ½ cup (appx) miracle whip or mayonnaise, more if you prefer
  • 3 tablespoons of mustard
  • 3 tablespoons of pickle relish or gherkins, chopped
  • ½ red onion, can use more if you prefer
  • salt and pepper to taste

Mix all together and you can garnish the salad with egg slices, chopped parsley or spring onion.
Chill over night.

Note:
If you use regular mayonnaise instead of miracle whip, and prefer a sweeter taste, add a little xylitol, sugar or condensed milk, whatever you prefer to sweeten it.
