HOMEMADE BISCOTTI
- 2.5 cups (270 g) cake flour
- 1 teaspoon (5 ml) baking powder
- ¼ teaspoon (1 ml) salt
- 4 teaspoon (45 ml) butter
- 1 cup (200 g) sugar
- 2 large eggs
- ½ teaspoon (2.5 ml) vanilla essence
- 1 cup (100 g) slivered almonds
Sift flour, baking powder and salt together.
Cream sugar and butter till light and smooth.
Beat in eggs one at a time.
Add vanilla essence.
Stir in almonds.
Sift dry ingredients over egg mix and fold in till dough just mixed.
Heat oven to 170°C.
Half the dough and roll into sausages- making sure your hands are well floured- for smaller ones make rolls smaller. Place the rolls on a prepared baking tray.
Bake for 30 minutes till golden brown and you see cracks on top.
Cool rolls for 10 minutes lower oven to 160°C.
Slice each roll diagonally into 2 cm slices using electrical knife or break knife.
Lay the slices 1 cm apart on baking tray and return to oven.
Bake till crisp and golden about 15 minutes.
Cool completely.
