COCONUT LIME CHICKEN
Coconut Lime Chicken with a splash of soya, a drizzle of honey and zing from a chilli superb flavour.
- 8 pieces of chicken, skin on
- 1 tin of coconut cream
- 1 lime, washed and sliced
- 2 tablespoons of soya
- 2 tablespoons of honey
- 1 fresh chilli, sliced or big pinch of dried chilli flakes
- salt and pepper
Preheat the oven to 180°C. Spray an ovenproof dish with non-stick spray. Place the chicken pieces in the dish. Sprinkle with salt and pepper.
Sprinkle the chillies over.
Mix the coconut cream, soya and honey together and pour over the chicken.
Add the lime slices on top of the chicken pieces.
Bake open for 45 minutes until golden brown.
Note:
It’s supposed to be served with noodles but I served with fettuccine.
I added steamed peas for colour and texture.
A most delicious dish.
