VODKA AND SODA BATTERED HAKE

Lockdown day #216🇿🇦 Vodka and soda battered hake, sweet potato chips and steamed young greenbeans.

  • ½ cup vodka
  • 1.5 cup cake self raising flour
  • 1 can (330 ml) soda water
  • 6 hake fillets deboned (I defrosted fillets overnight in fridge)
  • salt to taste
  • oil for deep frying

Combine the vodka, soda water and flour, mix well to make a runny batter.
Pat the fish dry with paper towel and season with salt. Dip the fish into batter to coat.
Fry immediately in deep oil (190°C) until golden.
Extra batter can be poured over the fish during the frying process.
I find my wok on gas hob works perfectly for heating the oil quickly and with enough depth for deep frying. I used about 1 and 3/4 litres of oil in wok.

Note:
I ate this version of batter the first time at Damhuis Restaurant in Melkbosstrand this past month. Was very happy when my daughter surprised me with their cookbook at the end of our meal.
The soda water can be replaced with beer and the self raising flour with normal cake flour.
