VEGAN OIL FREE BABY BRINJAL AND POTATO CURRY

Its Oil Free – Healthy – and Delicious!
- 4 baby brinjals, cubed
- 1 medium potato, cubed and pre-cook
- 3 cloves, crushed garlic
- ¼ onion
- 1 teaspoon cardamom
- 1 teaspoon garlic salt
- 1 teaspoon turmeric
- 2 tablespoons curry powder
- ½ teaspoon black pepper
- ½ teaspoon cayenne pepper
- 3 whole bay leaves
- salt to taste
In a pan with small amount of water on medium heat, add the onion and garlic cloves.
Once the onion and garlic is browned, add all your spices and more water.
Cook for 5 minutes.
Add the brinjals and potato cubes.
Cook for about 15 minutes.
Add more water when you need more.
