TRADITIONAL SOUTH AFRICAN VETKOEK

  • 5 ½ cups cake flour
  • 2 teaspoons salt
  • 2 – 3 tablespoons sugar
  • 2 cups lukewarm water
  • 1 packet of yeast (2 ¼ teaspoons)

In a large bowl mix salt, sugar, water, yeast.
Set aside for 5 minutes.
Add flour and mix until everything comes together as dough.
Cover loosely with kitchen cloth in a warm, draft free place for 1 to 2 hrs or until doubled in size.
Turn dough out onto floured surface and flatten to knock out air bubbles – can add flour if needed.
Roll out dough to 2,5 cm thick, cut 5 cm round shapes.
Heat about 5 cm vegetable oil (175°C) and fry 3 to 5 minutes each.
Serve with vegetable filling or mince or any filling of your choice.
