TOFFEE APPLE SELF SAUCING PUDDING
- Toffee apple pudding:
- 200 g soft brown sugar
- 200 g self raising flour
- 200 g butter
- 3 eggs
- 1 teaspoon vanilla extract
- 2 apples, peeled and diced
- Topping:
- 300 ml apple juice
- 100 g golden syrup
- 100 g soft brown sugar
Beat butter and sugar together.
Add the eggs and mix in.
Add the flour and mix in.
Add the vanilla.
Stir in apple chunks.
Spoon the mixture into greased slow cooker pot.
Put topping ingredients in a saucepan, heat enough to dissolve sugar.
Gently pour over the top of cake mix – do NOT stir.
Use tea towel under the lid and fold over top.
Set the pot on HIGH for 1 hour 45 mins – 2 hrs.
