THAI MASSAMAN SWEET POTATO CURRY
Hierdie resep is maklik en vinnig en net heerlik- comfort food.
- 1 onion, chopped
- 1 clove garlic, crushed
- 2 teaspoons olive oil
- 80 g Woolies Massaman curry paste sachet
- 1 kg sweet potatoes, chopped
- 400 ml coconut milk
- 1 cup milk
- 1 teaspoon fish sauce
- 2 teaspoons coriander, chopped
- juice of 1 lime
- 2 teaspoons peanut butter
Sauté the chopped onion and garlic in the olive oil until soft.
Add the curry paste and sauté for 3 minutes.
Add the sweet potato, coconut milk and milk and simmer for 25 minutes, covered.
Add the fish sauce, coriander, lime juice and peanut butter.
Mix through and serve.
Note:
Serve with chopped chilli and jasmine- or basmati rice and you can replace the fish sauce with Worcestershire sauce or soy sauce.
