SWEET POTATOES WITH ORANGE JUICE

  • 1,5 kg sweet potatoes
  • 3 tablespoon cornflour
  • 600 ml orange juice
  • ½ cup seedless raisins
  • ½ cup brown sugar
  • zest of 1 lemon

Preheat oven to 180°C.
Spray casserole dish with non-stick spray.
Peel and slice sweet potatoes. Boil until soft in slightly salted water. Drain and place in dish.

Sauce:
Blend cornflour in some of the orange juice in a 1-litre jug. Add the rest of the juice and the remaining ingredients. Heat on stove, stirring until thick. Pour over sweet potatoes.
Bake for 30 minutes.
Delicious as an accompaniment to any braai meats, and any pork dishes.
