SWEET POTATO WITH GREEN BEANS
- 200 g green beans
- 300 g sweet potato
- 8 slices bacon
- 1 small red onion
- 1 clove of garlic
- pinch of cayenne pepper
- dash of oil
Peel the sweet potato and cut into cubes. Put these together with the green beans in a pan of water and boil for about 10 to 12 minutes until they become slightly soft.
Heat the oven to 200 ºC.
Fry the bacon briefly, and cut the onion and garlic.
Drain the sweet potato and green beans and toss the bacon, garlic, red onion, olive oil and cayenne pepper in and mix through. Place in an oven dish and put in the oven for another 15 minutes.
