SWEET POTATO BREADROLLS

My cousin in Madeira sent me a recipe for bread rolls with sweet potatoe as an ingredient. Tried it out today and am very impressed.

  • 1 kg cake flour
  • 1 large sweet potato, cooked, peeled and grated (500 g)
  • 10 g instant yeast
  • 300 ml water (you can make fennel tea and use instead of plain water to add a different depth of flavour), you can add a bit more if you see it’s needed
  • 5 ml salt

Mix the above together.
Knead for about 5 minutes. Cover and let rise for an hour until double in size.
Make rolls, slice top and sprinkle with a little more flour.
Let rise until double in size around 20 minutes.
Bake at 170 ºC for between 20 – 30 minutes.
