SUPREME MEALIE BREAD

  • 1 cup maize meal
  • 10 ml baking powder
  • 1 cup cake wheat flour
  • ½ teaspoon paprika
  • ½ teaspoon salt
  • 1 cup buttermilk
  • 3 large eggs, beaten
  • 60 ml sunflower oil
  • 1 x 410 g tin cream style corn

Pre-heat oven to 180°C (I baked it at 160°C).
Place dry ingredients into mixing bowl.
Combine all wet ingredients and mix into dry ingredients until well combined.
Spoon into 4 prepared tins and bake for 45 – 60 minutes or until skewer comes out clean (I baked it for 60 – 80 min).
Allow to cool in the tins for few minutes, turn out onto cooling rack while still warm.
