SQAUSH CHORIZO BALLS WITH SESAME SEEDS

  • 3 gem squash, cut in half
  • garlic
  • 1 shallot
  • Chorizo sausage
  • yellow pepper
  • pinch of salt and pepper and any herbs of your choice

Cut up the garlic, Chorizo, shallot and yellow pepper.
Steam the gem squash and remove inside.
Mix the squash, garlic, Chorizo, shallot and yellow pepper.
Add salt, pepper and spices to taste.
Roll in balls and then roll in flour and sesame seeds mix.
Fry in olive oil until golden brown like in photo.
Make sure your oil is hot.

  • Side salad:
  • tomatoes
  • finely chopped onions
  • 1 teaspoon Dijon mustard
  • 2 teaspoon balsamic vinegar
  • 2 soup spoons of olive oil
  • salt and pepper

Cut up tomato and place on plate, sprinkle over onions.
Mix Dijon, vinegar and olive oil well together, pour over tomatoes.
Add salt and pepper to taste.

Served with gem squash balls, it was served hot.
