SPICE CAKE
I’m always on the lookout for delicious recipes, especially those that have to do with spices. I baked this cake and it is delicious. The Germans call it a breakfast loaf. I am happy to share the recipe.
- 1 cup butter
- 2 ¼ cups sugar
- 5 eggs
- 3 cups cake flour
- 1 tablespoon ground cloves
- 1 tablespoon ground cinnamon
- pinch of salt (1 ml)
- 1 cup buttermilk
- 1 teaspoon baking soda
- powdered sugar (icing sugar)
Preheat oven to 180°C.
Cream the butter and sugar until mixture is very light and fluffy.
Add the eggs and mix.
Mix the flour with the cloves, cinnamon and salt in a separate bowl.
Mix the baking soda and buttermilk together.
Add the baking soda mix and the flour mixture alternately to the butter mixture and stir until well mixed through.
Pour into a greased 10″ (25 cm) tube pan.
Bake for 45 – 55 minutes or until a toothpick inserted in the center of the cake comes out clean.
Cool the cake 10 minutes before removing from the pan.
When cool, sprinkle with powdered sugar or frost with caramel frosting.
Note:
Handle the cake with care when you turn it out of the pan, it is a soft textured cake.
