SNOWBALL COOKIES

“Ek het hierdie resep op die blad gesien en probeer… ek het sommer die pekanneute vervang met choc chips omdat ek nie neute gehad het nie. Dit is vreeslik lekker!!! Ek het net ‘n halwe mengsel gemaak en is nou sommer spyt daaroor. In totaal het ek so 391 g se koekies uitgekry.”

  • 1 cup butter, softened
  • ½ cup icing sugar
  • 2 teaspoons vanilla essence
  • 2 cups cake flour
  • ¼ teaspoon salt
  • 1 cup pecan nuts, chopped
  • extra icing sugar, for rolling

Blend softened butter with icing sugar. Add vanilla.
Mix in flour, salt and chopped pecans.
Form dough into balls or flattened cookies and place on an ungreased cookie sheet.
Bake the balls in a 160 °C oven for 20 minutes or the flattened cookies and bake at 200 °C for 10 – 12 minutes.
While hot, roll in icing sugar.
Let cool and roll in icing sugar again.
