SNOEK AND JEWEL SWEET POTATOES ON THE WEBER

  • 250 ml sweet chilli sauce
  • 25 ml soya sauce
  • 15 ml toasted sesame oil
  • 25 ml crushed garlic
  • 1 lemon’s juice
  • 25 ml olive oil
  • 1 snoek
  • sweet potatoes
  • butter
  • a salad of your choice

For the sauce, mix together the sweet chilli sauce, soya sauce, sesame oil, crushed garlic and lemon juice.
Pour olive oil into the bottom of a baking tray.
Place the snoek in the baking tray and cover with the sauce.
Wrap sweet potatoes in foil each with a teaspoon butter.
Prepare coals (medium heat) and move to sides of Weber.
Add baking tray with the snoek and the sweet potatoes wrapped in foil.
Close Weber with lid. Leave all breathers open.
Cook until sweet potatoes are soft and snoek flakes easy.
Serve with a green salad.
