SANDWICH SPREAD

SANDWICH SPREAD

  • 6 carrots
  • 1 green pepper
  • 1 red pepper
  • 1 yellow pepper (or any combination)
  • 3 onions (I use red and white)
  • 1 cucumber
  • 750 ml white vinegar
  • 750 ml mayonnaise
  • 1 tablespoon sugar
  • salt and pepper, to taste
Grate carrots, chop all other vegetables fine, put into a glass container. Pour vinegar over veggies and leave overnight.
Drain and pat dry. Add mayonnaise, sugar, salt and pepper to vegetables and mix well.

Scoop into sterilized bottles and seal. Keep in fridge.

Note:
Also very nice with a few peppadews in there for some kick.

Squeeze dry rather than pat dry, makes for a firmer mix.
