ROCK BUNS

Cook: 25 minutes | Servings: 12 buns

ROCK BUNS

  • 2 cups cake flour
  • 2 teaspoons baking powder
  • ¼ teaspoon salt
  • ¼ teaspoon cinnamon / nutmeg, optional
  • ¼ cup sugar
  • ½ cup margarine
  • ½ cup raisins
  • 2 eggs
  • ¼ cup milk
  • 1 teaspoon vanilla essence

Preheat the oven to 200°C.
Mix the dry ingredients together in a bowl.
Rub the margarine into the dry ingredients, add the raisins and mix through.
Beat the eggs, milk and vanilla in a jug until mixed and add to the dry ingredients, mix to a soft dough.
Using 2 forks, scoop the dough and place the balls on a prepared baking sheet, do not roll the dough into balls, the dough must be messy like rocks.
Bake the cakes in the preheated oven for 25 min.

Note:
You can use self raising flour, but do not add baking powder.
