QUICK AND EASY CREAMED SPINACH WITH FROZEN CHOPPED SPINACH

I find this more economical than fresh spinach. It’s enough for 4 portions (unless you love seconds like we do).
  • 1 third of a 1 kg bag of frozen, chopped spinach
  • 1 cup fresh cream
  • 1 packet creamed mushroom soup (cup of soup individual portion)*
  • squirt of lemon juice
  • salt and pepper to taste

Note:
*You can use cornstarch instead but I wanted to try the Cup of Soup as an option.

Put the frozen spinach in pot and add about 100 ml boiling water with it. Get it cooking, put lid on and turn down to medium simmer until all the water has cooked away.
Mix the cream and cup of soup. Stir the soup and cream mixture through while turning up the heat and keep stirring until it’s thickened up. Add lemon juice, salt and pepper, stir through and serve immediately.

Option:
You can prepare it before the time and just warm up again before serving.

Note:
I find using frozen spinach is more economical than buying fresh as a 1 kg packet goes a long way. That is when I don’t have fresh spinach from my garden.
The taste is perfect. My husband didn’t even notice it wasn’t fresh spinach.
