POTATO AND CARROT SOUP

My seun en sy gesin bly in Dale in Noorweë. Die twee oudstes (Fia 11 jr en Ben 8 jr) het vanaand vir die gesin heerlike Potato and Carrot Soup gemaak uit ‘n kinder-resepteboek. Lyk so lekker, hierdie ouma gaan dit ook maak.

  • 4 large potatoes
  • 6 medium carrots
  • 2 teaspoons butter or oil
  • 1 small onion, peeled and sliced
  • 600 ml vegetable stock
  • salt and pepper
  • pinch of mixed herbs
  • Peel and dice potatoes into 1 cm cubes.
  • Peel and cut carrots the same as potatoes, or a alternatively grate them.
  • On the stove top, add the butter or oil to a pan then add the onion slices and soften gently.
  • Pour in the vegetable stock and add potatoes and carrots along with herbs and seasoning.
  • Simmer until vegetables are soft and fluffy.
  • Mix well.  Serve with fresh bread.
