POTATO AND CARROT SOUP

My seun en sy gesin bly in Dale in Noorweë. Die twee oudstes (Fia 11 jr en Ben 8 jr) het vanaand vir die gesin heerlike Potato and Carrot Soup gemaak uit ‘n kinder-resepteboek. Lyk so lekker, hierdie ouma gaan dit ook maak.
- 4 large potatoes
- 6 medium carrots
- 2 teaspoons butter or oil
- 1 small onion, peeled and sliced
- 600 ml vegetable stock
- salt and pepper
- pinch of mixed herbs
- Peel and dice potatoes into 1 cm cubes.
- Peel and cut carrots the same as potatoes, or a alternatively grate them.
- On the stove top, add the butter or oil to a pan then add the onion slices and soften gently.
- Pour in the vegetable stock and add potatoes and carrots along with herbs and seasoning.
- Simmer until vegetables are soft and fluffy.
- Mix well. Serve with fresh bread.
