POTATO AND CARROT SOUP

My seun en sy gesin bly in Dale in Noorweë. Die twee oudstes (Fia 11 jr en Ben 8 jr) het vanaand vir die gesin heerlike Potato and Carrot Soup gemaak uit ‘n kinder-resepteboek. Lyk so lekker, hierdie ouma gaan dit ook maak.

  • 4 large potatoes
  • 6 medium carrots
  • 2 teaspoons butter or oil
  • 1 small onion, peeled and sliced
  • 600 ml vegetable stock
  • salt and pepper
  • pinch of mixed herbs
Peel and dice potatoes into 1 cm cubes.
Peel and cut carrots the same as potatoes, or a alternatively grate them.
On the stove top, add the butter or oil to a pan then add the onion slices and soften gently.
Pour in the vegetable stock and add potatoes and carrots along with herbs and seasoning.
Simmer until vegetables are soft and fluffy.
Mix well.
Serve with fresh bread.
