PORTUGUESE CHICKEN WITH OVEN ROASTED VEGGIES
- whole chicken
- brinjals
- pickling onions
- carrots
- sweet potato
- green pepper
- garlic
- lemons
- Robertson Zesty Lemon and Herb seasoning
- Robertson Portuguese Chicken spice
Preheat oven to 190°C.
Put the veggies of choice in oven dish.
Drizzle liberally with olive oil. Sprinkle with Robertsons Zesty Lemon and Herb seasoning.
Place a wire roasting holder (this is part of the Weber utensils) over the veggies and position the chicken skin side up on top (I removed the backbone and flattened the chicken as it cooks quicker that way).
Make slashes with sharp knife into the thickest parts of the white meat.
Sprinkle with lemon juice, then rub with olive oil and liberally sprinkle with Robertson’s Portuguese Chicken spice on both sides.
Oven roast for 90 minutes.
Check if chicken cooked through, joint and serve with the veggies.
