PILLOW BREAD

My husband calls this pillow bread because it’s so soft and fluffy. Very simple to make.

  • 2 teaspoons yeast
  • 3 tablespoons sugar
  • ½ cup of full cream milk (lukewarm)
  • 50 g butter
  • 3 cups of cake flour
  • ½ teaspoon salt
  • Mix yeast, sugar, water and milk and leave aside for 10 minutes.
  • Sift flour and salt and mix in butter.
  • Mix together yeast and flour mixture for 5 minutes and leave in a dish greased with oil. Cover with a cloth.
  • After 1 hour roll out on a lightly floured surface. Roll like a Swiss roll and place in a greased bread loaf tin.
  • Leave for another 1 hour to rise.
  • Bake at 180°C for 25 minutes.
  • Rub butter on top as soon as it’s baked.
