PICKLED FISH MUFFINS
“Enough for 12 medium sized muffins. For a vegetarian option, use one tin of curried mixed vegetables.”
- 250 ml cake flour
- 10 ml baking powder
- 2 ml salt
- 125 ml oil
- 125 ml milk
- 1 egg
- 1 tin pickled fish (flaked and minced together with onion and sauce in tin – I used half of the tin)
Sieve dry ingredients together.
Beat egg, milk and oil together and mix into dry ingredients.
Spray a muffin pan with cooking spray.
Add dessert spoonful of batter in muffin pan.
Add a teaspoon of fish on top of batter.
Bake for 10 minutes in a preheated oven at 210 °C.
