PEPPERMINT CRISP DELIGHT

“This is such an easy dessert to put together. I did the cheat option and used a box cake mix, but you can use any chocolate cake recipe you want. Very very yummy!!!”

  • 1 box chocolate cake mix (and all ingredients needed as per instructions)
  • 250 ml fresh cream
  • 1 tablespoon icing sugar
  • 500 ml vanilla ultramel custard
  • 1 tin caramel treat
  • 2 slabs peppermint crisp chocolate, coarsely chopped

Bake cake as per instructions, but use a flat baking pan that has been well greased and lined with baking paper to bake it in. Let cool completely.
Use the rim of a transparent glass to cut out circles from the baked sheet cake.
Beat caramel treat until it becomes a little more runny. Add about one tablespoon of icing sugar (add more to taste) to the fresh cream and beat until nice and stiff.
Now layer your dessert.
Start by pouring a little caramel into every glass.
Top this with a slice of cake, then a thin layer of crushed peppermint crisp, then a nice layer of custard, another piece of cake, another thin layer of peppermint crisp, and another generous layer of custard.
Add a piping of fresh cream, a drizzle of caramel and a sprinkling of more peppermint crisp over the top.
