PEARL BARLEY AND LENTIL SALAD WITH BASIL PESTO

Trying to eat healthy lol… and this is so worth it👌👌

  • 1 cup cooked pearl barley
  • 1 cup cooked black lentils
  • ½ cup cooked black beans, rinsed (I used tinned)
  • ½ cup cooked chick peas, rinsed (I used tinned)
  • 1 wheel black pepper feta cheese
  • freshly ground salt and pepper
  • ½ cup peas, optional
  • basil pesto
  • rocket leaves

In a bowl, mix barley, lentils, black beans and chick peas together.
Break and crumble feta cheese over pulses mixture.
Add 3 heaped tablespoons of basil pesto and mix.
Taste and add salt and pepper to taste.
Serve with rocket leaves.
