OVEN BAKED GREENBEANS
- 600 g green beans
- 250 g mushrooms
- 125 g bacon strips cut into blocks
- 2 shallots, finely chopped
- 250 ml of cooking cream
- 50 g cream cheese
- 30 g grated parmesan cheese
- salt and pepper to taste
- Optional:
- cayenne pepper to taste
Preheat the oven to 180°C. Cut the mushrooms into slices and the onion into small cubes. Take a large frying pan and fry the bacon in it until cooked and crispy. After frying, put the bacon in a bowl and blot away the excess fat.
Fry the chopped onion and mushrooms in the same frying pan over medium heat for approximately 3 minutes. Add the cooking cream, cream cheese and herbs to the pan. Bring this to the boil while stirring and cook for about 4 minutes, until the sauce starts to thicken.
Lower the heat and simmer for another 6-8 minutes to thicken the sauce further.
Meanwhile, grab a large pan and fill it with water. Add the green beans and a pinch of salt to the pan and cook the green beans for about 8-10 minutes until al dente. After cooking, drain the green beans well and pat dry with a paper towel if necessary.
Add the cooked green beans to the pan with the mushroom sauce and mix well with a spatula. Spoon the contents of the pan into an oven dish and bake for 15 minutes in the preheated oven.
After 15 minutes, remove the dish from the oven and sprinkle with the fried bacon and parmesan cheese.
Return the casserole to the oven and bake for another 5 minutes.
