OAT CRUNCHIES

  • 250 g soft butter
  • 2 cups of cake flour
  • 1 ½ cups of brown sugar
  • 1 ½ cups of desiccated coconut
  • 1 ½ cups of Jungle Oats
  • 4 tablespoons of boiling water
  • 2 teaspoons of bicarbonate of soda
  • 2 tablespoons of golden syrup
Mix together all ingredients except boiling water, bicarbonate of soda and golden syrup.
In a little bowl mix the bicarbonate of soda, boiling water and golden syrup and place in the microwave for 30 seconds and then incorporate with the flour mixture.
Form little cookies and place on a prepared baking tray.
Bake at 160°C for 20 to 25 minutes.
Switch the oven off and leave the biscuits to get crispy for about 15 minutes.
Decorate with melted chocolate if desired.
