NO BAKE OREO CHEESECAKE

  • ¼ cup melted butter
  • 2 x 300 g Oreo cookies
  • ½ cup white chocolate chips
  • 3 x 250 g Philadelphia cream cheese, at room temperature
  • 1 ½ cup icing sugar
  • 1 ¼ cup cream

In a blender grind one pack of cookies fine and add the melted butter. Set aside 5 Oreo’s for decoration.
Press down in a 19 cm spring form pan.
Melt the chocolate chips and ¼ cup cream together and set aside.
Beat cream cheese until smooth.
Then add icing sugar and melted chocolate cream, beat until combined.
Add remaining cream and beat until fluffy with somewhat stiff peaks.
Set aside 5 Oreo’s for decoration of the second pack of cookies.
Crush coarsely the remainder of cookies and fold it into the cream cheese filling.
Spoon the filling onto the crust.
Cover and chill overnight.
Loosen the spring form ring and serve.

Note:
I added a packet of gelatine mixed in a little water and then mixed into cream cheese. I wanted to make sure it will set as the mixture was at the look of it a bit runny.
