NO BAKE CHEESE CAKE WITH CANNED FRUIT

  • 1 tin condensed milk
  • 1 tin canned fruit
  • 250 g smooth cream cheese
  • 250 ml fresh cream
  • ½ cup lemon juice
  • Biscuit base:
  • 1 packet tennis biscuits
  • 40 g butter (melted)
  • Syrup:
  • juice of the canned fruit
  • 1 desert spoon gelatine or 2 ½ teaspoons of jelly powder

Crush biscuits and mix with butter and press with the back of a spoon into a bowl as the crust.
Beat condensed milk and lemon juice till thickened.
Add cream cheese and mix through till smooth.
Whip the cream till stiff and fold in.
Place this mixture on the biscuit base.
Place fruit pieces on top of the filling.

Warm the juice of the canned fruit with a desert spoon of gelatine (I did not have gelatine so I used 2 ½ teaspoons of jelly).
Once the syrup has cooled pour it over the tart.
Refrigerate till it is set.
