MOIST AND RICH APPLE CAKE
- 2 eggs
- 1¾ cups sugar
- 2 heaped teaspoons cinnamon
- ½ teaspoon nutmeg
- ½ cup oil
- 6 medium gala or fuji or honey crisp apples
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- pinch of salt
Preheat oven to 180 °C.
In a large bowl, mix eggs, sugar, cinnamon, nutmeg and oil.
Peel and slice apples and add to mixture in bowl (coating as you go to keep apples from turning brown). Mix together baking powder, salt and flour and add to ingredients in bowl.
Mix well (best with a fork) until flour is absorbed by the wet ingredients. Pour mixture into greased bundt pan. Bake for approximately 55 minutes.
