MIKE’S KITCHEN CHEESECAKE

- 250 g smooth cottage cheese
- 250 ml fresh cream
- 50 ml fresh lemon juice
- 1 packet marie biscuits
- ⅔ teaspoon gelatine
- 40 g butter
- 80 ml white sugar
- ⅔ tin condensed milk
- Crush biscuits finely and mix 2/3rds with melted butter.
- Layer the base of the tray.
- Mix smooth cottage cheese with condensed milk. Add the sugar.
- Beat cream till firm and add to the mixture.
- Dissolve the gelatine in the lemon juice and mix well. Add to the mixture.
- Pour cheese mixture into the tray with crumb base.
- Sprinkle with the rest of the biscuit crumbs.
- Leave in the fridge overnight to set.
