MIKE’S KITCHEN CHEESECAKE

  • 250 g smooth cottage cheese
  • 250 ml fresh cream
  • 50 ml fresh lemon juice
  • 1 packet marie biscuits
  • ⅔ teaspoon gelatine
  • 40 g butter
  • 80 ml white sugar
  • ⅔ tin condensed milk
  • Crush biscuits finely and mix 2/3rds with melted butter.
  • Layer the base of the tray.
  • Mix smooth cottage cheese with condensed milk. Add the sugar.
  • Beat cream till firm and add to the mixture.
  • Dissolve the gelatine in the lemon juice and mix well. Add to the mixture.
  • Pour cheese mixture into the tray with crumb base.
  • Sprinkle with the rest of the biscuit crumbs.
  • Leave in the fridge overnight to set.
