  • Whisk together in a bowl:
  • 1 cup cake flour
  • ¾ cup sugar
  • 2 teaspoons baking powder
  • ½ teaspoon bicarbonate of soda
  • 4 tablespoons oil
  • 3 tablespoons cacao
  • 2 eggs
  • Mix the following together and add:
  • 1 cup boiling water
  • 1 heaped teaspoon of coffee

Pour mixture in a 2 liter greased ice cream dish and bake for 7 minutes in the microwave on high. (I used a silicone bundt pan for this one but I think an ice cream container works better.)

Leave cake in the microwave for about 7 to 10 minutes after baking.
Take out and let cool on a wire rack.

While waiting for the cake to cool, add in a pot the ingredients for your ganache:

  • Mix together:
  • 3 tablespoons cacao
  • 3 tablespoons cake flour
  • ½ cup sugar
  • Add:
  • 1 cup of milk
  • Extra:
  • 2 tablespoons butter

Stir over medium high heat till its thickened and bubbling.
Take off the heat and add the butter, mix well.
Cover and set aside.

Cut cake in the middle and spread some of the cooled ganache on the one half. Put the other half on top.
Decorate cake with the rest of the ganache on top.
