MASHED POTATO SANDWICH

You can use already prepared leftover mashed potato, as long as you have 2 cups potato

  • 1 cup mashed potatoes, only cooked and mashed, nothing added
  • 1 cup mashed potatoes, fully prepared with all the usual trimmings – leftovers from last nights dinner
  • ¼ cup of whipped Chive Philadelphia cream cheese
  • 2 large eggs
  • 1 cup strong shredded Cheddar cheese
  • 2 cups of Panko breadcrumbs
  • Add any spices to your liking

Mix all together in one container. It should be the consistency of ‘dough”.
Lay parchment paper on your countertop and place ‘dough’ on the parchment.
Use a measuring cup (1/3 cup) and scoop out 10 portions.
Flatten each mound with the palm of your hand and form it into a block (it should look like a square-ish slice of bread).
Make sure you have them all the same size.
Place a slice of cold cut meat, I used ham and corned beef, respectively, on half of the ‘bread slices’ and you can also top it with a slice of cheese if you like lots of cheese.
As this is the first time, I concocted this (do not have a recipe), I only added cheese on two of the slices.
Take the second set of ‘dough’ and make a sandwich.
Use your fingers to pinch/press the sides to seal the toppings inside the two ‘bread slices’.
I am not a big one to fry in oil, but this is an exception I made, but have an idea to try it a different way, but more about that for the next time.
Add either some oil or butter in a pan, and when heated, add two at a time in the pan and fry/toast it until done, and it has a wonderful golden color.
This took about 10-15 minutes. I had the heat on medium-high as I decided I will rather bake/fry it longer than burn it and I wanted the egg to cook through and also the cheese to go gooey and soft inside the sandwich.
Serve immediately while still hot.
My husband gave it a thumbs up and ended up having 2 for lunch and later the afternoon enjoyed the one that we did not finish, as it’s rather filling, but most delicious.
I am an incredibly happy camper and he said that he loves the texture and combination of the ingredients, so that means I will do it again.
