MASH POTATO AND CHEESE WAFFLES

  • 2 cups left over mashed potato
  • 2 eggs lightly beaten
  • ¼ cup milk
  • ¼ cup bread crumbs
  • ¾ cup shredded cheddar, more for topping, optional
  • chopped ham
  • 1 small onion, diced
  • ¼ teaspoon baking soda
  • ½ teaspoon baking powder
  • salt and pepper to taste
  • ½ teaspoon garlic and herb spice
  • sour cream for serving, optional

Mix it all together and bake it in a waffle maker till done.
