MANGO, PINEAPPLE AND BLUE BERRY SALSA
Mango, pineapple and blue berry salsa* with freshly squeezed lime juice.
Other ingredients are radish, red onion, grapes, green and red sweet peppers, micro herbs, garlic chives, chopped mint and a good sprinkling of salt. Do not leave the salt out. It definitely adds another layer of flavour to the salsa.
You can add fresh cilantro but I left it out to keep hubby happy.
I didn’t really check the quantities but know I used
- 1 pineapple
- 2 mangoes
- half a cup of blue berries
- 2 radishes
- a few grapes
- 2 limes squeezed
I really wanted to add an avo but it was still unripe.
*I call it a salsa as it’s not a fruit salad.
Tip:
This was a perfect accompaniment with roast gammon.
