LOW GI BUTTERMILK RUSKS

Ek het ook beskuit gebak. Heerlik uitgekom en sopas klaar uitgedroog.
- 3 cups cake flour
- 2 cups oat bran
- 1 cup whole wheat Pronutro
- 1 cup sugar
- 50 ml baking powder
- 125 ml canola oil
- 2 eggs
- 500 ml low fat buttermilk/maas/plain yogurt (I used buttermilk)
- 5 ml caramel essence
- 5 ml vanilla essence
- 2 small green apples (peeled and grated)
- Sift all the dry ingredients together.
- Mix oil, eggs and buttermilk well.
- Add grated apples and essence to buttermilk mixture.
- Add buttermilk mixture to the dry ingredients and mix well.
- Spoon in a sprayed rusk pan.
- Bake for 60 min at 170ºC.
- Remove from oven, cool down.
- Cut into pieces and dry rusks in oven at 80 ºC.
1 rusk = 1 slice of bread
