LOW CALORIE QUINOA, HAM AND CHEESE MUFFINS

I got 8 muffins out of this recipe. So it’s about 96 calories per muffin. Nice to put in a lunchbox as well.

  • 1 cup cooked quinoa (222 calories)
  • 92 g ham, cut up in blocks (151 calories)
  • 2 eggs (140 calories)
  • 72 g white Cheddar (252 calories)
  • salt and pepper to taste

Mix and put a big spoonful in a muffin pan.
Repeat till mixture is used up.
Bake at 180 °C till set.
