LIZ’S ITALIAN MEATBALLS

  • Meatballs:
  • 2 slices brown bread
  • 200 ml olive brine
  • 500 g ground beef
  • 1 small onion
  • 25 g tomato paste
  • 10 ml brown sugar
  • 5 ml garlic salt
  • 5 ml Italian herb
  • 1 large egg
  • Sause:
  • 250 ml plain yoghurt
  • 80 ml olive oil
  • 25 g tomato paste
  • 5 ml brown sugar
  • 5 ml garlic salt
  • 50 ml Balsamic vinegar
  • 500 ml sour milk or more
  • 100 ml olive oil
  • Garnish:
  • 200 g black olives

To make the Meatballs:
Soak bread in juice (brine) poured off the olives. Add beef, grated onion, the tomato paste, sugar, garlic salt, Italian herbs and the egg. Mix well.
Shape into medium sized balls and fry both sides till brown in olive oil. (I do everything in my electric frying pan) Turn heat to lowest setting.

To make Sauce:
Mix yoghurt, olive oil, tomato paste, brown sugar, garlic salt, Balsamic vinegar and 250 ml sour milk together.
Pour over meatballs, add olives and simmer for about 5 min. (If you prefer a saucier version, remove meatballs, add rest of sour milk with a bit of sugar and stir till it starts forming a nice sauce, pour over meatballs again)
Serve with any pasta (I used Spaghetti)
