LAMB AND VEGGIES IN THE PRESSURE COOKER
Boerekos💕lamb with peach chutney, green beans and my favourite vegs … potatoes and gem squash
- 600 g lamb chump chops
- two medium chopped onions
- 4 potatoes halved
- handful of green beans
- 2 gems
- lamb stock cube
- cornflour to thickens
Everything except the rice made in my electric pressure cooker. The lamb fried in a bit of oil first to get some colour then half a cup of water added and steamed on MEAT setting until soft. Once the meat was soft I added onions, potatoes and green beans and put the gems (cut into halves and pips scooped out) upside down on top of the green beans.
Steamed on VEGETABLE setting until done. Remove the veggies carefully so as not to break up.
Add lamb stock cube dissolved in half a cup of hot water and make a slurry of cornflour and a bit of water to thicken the gravy.
I added a good squirt of lemon juice as the lamb is rich.
Serve the meaty gravy on rice and add the rest of the veggies.
Quick and delicious meal.
