KOESISTERS WITH NAARTJIE

  • Mix the dry ingredients:
  • 5 cups cake flour
  • 3 tablespoons aniceed
  • 2 tablespoons cinnamon
  • 10 g yeast
  • 1 tablespoon ginger
  • 1 tablespoon cardamom mixed with naartjie
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • Microwave  the following for 1 min:
  • 300 ml warm water
  • 250 ml milk
  • 3 tablespoons butter
  • Add the following to the milk mixture:
  • quarter cup sugar
  • 1 beaten egg
  • Syrup
  • 2 cups water
  • 3 cups sugar
  • cinnamon stick
  • Naartjie peel
  • oil for frying

In a large bowl, mix all dry ingredients, add the milk mixture and mix together until well combined.
Knead the dough for about 10 minutes, the dough will be sticky, do not be tempted to add more flour, just use some oil on your hands when kneading.
Cover with a cloth or cling wrap and allow to rise for about 90 minutes.

Next knock down the dough on floured surface and use a little oil on your hands. Shape little oblong shapes, place on a tray and cover while you roll the rest of the dough.
Deep fry in hot oil in a deep saucepan on medium to high heat until brown on both sides. Remove from the oil.

Mix all syrup ingredients in a pot until sticky and bubbling. Dip the koeksisters in the warm syrup and allow soaking for about half a minute depends on how sweet you want it; you may do a little longer. Place dipped koeksisters in a bowl and sprinkle with coconut.
