JAM SWISS ROLL

  • 3 eggs
  • ¾ cup castor sugar
  • ¾ cup cake flour
  • 1 teaspoon baking soda
  • 100 g jam of choice

Preheat oven to 180°C.
Whisk eggs and castor sugar together until fluffy.
Add flour to egg and sugar mixture.
Turn batter out into a shallow baking tray.
Bake for 7 to 10 minutes until lightly golden. Turn sponge out onto castor sugar dusted wax paper.
Heat jam in microwave to allow easy spreading. Smear jam thickly over warm sponge. Trim the edges.
Roll sponge tightly.
Sprinkle with icing sugar and serve.
