JAM CENTERED CUPCAKES
- 3 eggs
- 125 g butter
- ¾ cup of sugar
- 1 teaspoon vanilla essence
- ¾ cup of cake flour
- 1 tablespoon custard powder
- 1 teaspoon baking powder
- jam of your choice for filling centres
Cream butter, sugar and vanilla essence until light and fluffy.
Sift dry ingredients and add to butter mixture.
Grease a muffin tray, put a tablespoon of cake mix, followed by a teaspoon of jam and finish off with a tablespoon of cake mix.
Bake at 180ºC for 20 minutes and dust with icing sugar.
So delicious and better than any store bought cupcake.
