JACKET POTATOES WITH SOUR CREAM
Quantities are to taste.
- potatoes
- coarse sea salt
- sour cream / butter
Potatoes, cleaned.
Prick potatoes with fork.
Pack dry potatoes in oven dish on a layer of coarse salt.
Bake at 180ºC for 45 minutes.
Turn over and bake for another 45 minutes or until soft.
Cut potato diagonally and then across, press on sides for potato to ‘open’.
Keep the salt, you can re-use it a couple of times.
Serve with sour cream and/or butter.

I finely grate a small onion and squeeze the juice into my sour cream, add some extra lemon juice, salt and pepper.
