HUNGARIAN TARTS BY YASMEEN

  • 250 g butter
  • 1 cup castor sugar
  • 1 teaspoon vanilla essence
  • pinch salt
  • ¼ cup oil
  • 2 eggs
  • 3½ cups sifted cake flour
  • 3 teaspoons baking powder
  • jam, to taste (I used about 6 tablespoons)
  • icing sugar, for decoration

Cream the butter, sugar, oil and vanilla essence until a pale white colour, add eggs and beat some more.
Add the rest of the ingredients.
Make a soft dough.
Layer ¾ of the dough on a baking tray.
Spread the jam, as much as you like, to taste.
Grate the rest of the dough over.
Bake at 180 °C for 20 – 25 minutes.
Sprinkle with icing sugar once done and cut in squares whilst still hot.
