HOW TO PREPARE CROCODILE MEAT

Crocodile meat is tricky to prepare. It’s a meat with a delicate flavour and doesn’t need strong marinades. Just use lime juice and honey and leave it for 6 hours or more for the marinade to sip into the meat.

Crocodile meat is tricky to prepare. It’s a meat with a delicate flavour and doesn’t need strong marinades. Just use lime juice and honey and leave it for 6 hours or more for the marinade to sip into the meat.
- 500 g crocodile meat
- 4 teaspoons honey
- 1 teaspoon salt
- pepper to taste
- ½ a lime / lemon juice
- Season the crocodile meat with salt and pepper.
- Mix the lime juice and honey and pour over it the meat.
- Massage this into the meat.
- Refrigerate for a minimum of 6 hours to allow the flavours to fuse and sip into the meat.
- After your marinating time, put the meat in your roasting tray and grill the meat at 160ºC for 45 minutes.
- It’s important that you serve the meat straight from the oven whilst it’s still hot. It tastes better that way.
