HOW TO PREPARE CROCODILE MEAT

Crocodile meat is tricky to prepare. It’s a meat with a delicate flavour and doesn’t need strong marinades. Just use lime juice and honey and leave it for 6 hours or more for the marinade to sip into the meat.
  • 500 g crocodile meat
  • 4 teaspoons honey
  • 1 teaspoon salt
  • pepper to taste
  • ½ a lime / lemon juice
  • Season the crocodile meat with salt and pepper.
  • Mix the lime juice and honey and pour over it the meat.
  • Massage this into the meat.
  • Refrigerate for a minimum of 6 hours to allow the flavours to fuse and sip into the meat.
  • After your marinating time, put the meat in your roasting tray and grill the meat at 160ºC for 45 minutes.
  • It’s important that you serve the meat straight from the oven whilst it’s still hot. It tastes better that way.
