HOT CHICKEN CURRY
Teaching Joseph to cook. This is one of his creations… really not bad for a novice chef….👌
- 1 chopped onion
- 1 tablespoon oil
- 2 tablespoons medium curry powder
- 2 teaspoons chicken spice
- 1 chopped tomato
- 6 chicken thighs or pieces
- 2 peeled and chopped carrots
- 2 peeled and cubed potatoes
- 1 handful chopped green beans
- 2 cups water with 1 chicken cube
- 2 tablespoons brown onion soup mixed with 4 tablespoons water
- salt and pepper to taste
In a saucepan, fry onion in oil until soft.
Add curry powder, chicken spice and tomato.
Fry for 2 min.
Add chicken and fry until brown.
Add carrots, potatoes, green beans and chicken stock.
Stir and simmer for 30 minutes with the lid on.
Thicken with brown onion soup mix and simmer for 5 minutes.
Season with salt and pepper (be careful as this is already salty).
Serve with rice.
