HEALTHY SPINACH, EGG AND MUSHROOM BREAKFAST

This will vary, as you can use as little or much as you prefer and if you make this for more than one person, you will obviously adjust the quantity accordingly.

  • chopped onions
  • sliced mushrooms
  • baby spinach
  • egg
  • spices

In a small single size pan, start by frying the onions, then add the mushrooms and fry till just tender.
Add the spinach on top and stir fry until wilted.
Make a hollow in the middle of this mixture and crack open an egg.
Cover with the lid of the pan and cook until egg is done to your liking.
Serve in the pan and if you prefer, you can add some salt and pepper to your taste.
Enjoy with a fresh glass of orange juice.

Note:
The veggies will cook further so be careful not to overdo it at the beginning.
